VEGANUARY: Spicy Noodle Soup Recipe

  • 1 package of your favorite vegan noodles (I like soba noodles or rice noodles)
  • 1 block of tofu, cubed
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 2 tablespoons of soy sauce or tamari
  • 2 tablespoons of sriracha or other hot sauce
  • 1 tablespoon of agave nectar or maple syrup
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of sesame oil
  • 1 teaspoon of sea salt
  • 1 teaspoon of black pepper
  • 2 cups of vegetable broth or water
  • 1 cup of fresh or frozen vegetables of your choice (I like peas, carrots, and broccoli)
  • Optional: Toppings such as scallions, cilantro, and lime wedges


  1. Bring a pot of water to boil and cook the noodles according to the package instructions. Drain and set aside.
  2. In a large skillet or pot, heat the sesame oil over medium heat. Add the onion, garlic, and ginger and sauté until fragrant.
  3. Add the tofu and cook for a few minutes, until golden brown on all sides.
  4. In a small bowl, mix together the soy sauce, sriracha, agave nectar, rice vinegar, sea salt, and black pepper.
  5. Add the sauce to the skillet and stir to combine. Add the vegetable broth and bring to a simmer.
  6. Add the cooked noodles and fresh or frozen vegetables and cook for a few minutes, until the vegetables are tender.
  7. Serve the spicy noodle soup topped with scallions, cilantro, and lime wedges, if desired.
