VEGANUARY: Spicy Noodle Soup Recipe

Instructions:

  1. Bring a pot of water to boil and cook the noodles according to the package instructions. Drain and set aside.

  3. Add the tofu and cook for a few minutes, until golden brown on all sides.
  4. In a small bowl, mix together the soy sauce, sriracha, agave nectar, rice vinegar, sea salt, and black pepper.
  5. Add the sauce to the skillet and stir to combine. Add the vegetable broth and bring to a simmer.
  6. Add the cooked noodles and fresh or frozen vegetables and cook for a few minutes, until the vegetables are tender.
  7. Serve the spicy noodle soup topped with scallions, cilantro, and lime wedges, if desired.
